Mint Chocolate Chip

      Ingredients

      11⁄4 cups whole milk
      13⁄4 cups heavy whipping cream
      3⁄4 cup granulated sugar
      1⁄4 teaspoon fine sea salt
      2 tablespoons golden syrup (2 cups of sugar, 2 tablespoons lemon juice, 1 cup water & 1 teaspoon vanilla)
      3 to 4 drops pure peppermint oil
      3 ounces bittersweet chocolate (70% cacao), finely chopped

      In a mixing bowl, combine the milk, cream, sugar, salt, golden syrup and peppermint oil. Stir with a spoon until the sugar dissolves, using a quick circular motion without creating foam. This will take a few minutes. Pour into a container, cover, and refrigerate until chilled. For each serving, stir and then pour ½ cup of the chilled mixture into the Sweet Spot. Sprinkle with 2 tablespoons chopped chocolate. Stir until frozen and serve. Makes six ½-cup servings.
