Cilantro Lime Beer Ice Cream
Ingredients
2 cups beer, prefer heavier beers such as stouts, browns or ales
1 cup sugar
Juice from one lime
2 cups heavy whipping cream
1 bunch, cilantro, coarse mince
1 pinch salt
1 part love
Reduce 2 cups of beer by half (1 cup will remain once finished) • Add 1 cup sugar and juice from one lime while reducing • Mince 1 bunch of cilantro and add to reducing mixture at beginning (tarragon would also work) • Add 1 pinch of salt • Sieve mixture over bowl to remove cilantro • Chill when complete (after about 10 minutes simmering) Whisk together chilled beer reduction with heavy whipping cream (save a few tablespoons of reduced beer mixture) Add to Sweet Spot ice cream maker to make ice cream Garnish with fresh cilantro, lime zest and drizzle with remaining beer reduction Enjoy!
